I am of German and Irish descent, so I like to bake,
probably as much as I like to cook. Brownies are one of my favorite treats.
However, I like to mix it up and include mint to my brownie treats. I found
this recipe for Luck o' the Irish Brownies online @ Allrecipes.com. One of the
reasons I like mint so much is because it tastes so refreshing, similar to
eating a York Peppermint Patty.
This recipe for Luck o' the Irish Brownies has been a tremendous success for me personally during the holiday season. Of course, it works well on St. Patrick’s Day, too.
Try it! Your family and friends will like it a lot.
Please note, it is very important that you use a 9x13-inch pan.
Add the following ingredients to your shopping list:
4 (1 ounce) squares unsweetened chocolate
1 cup margarine, softened
2 cups white sugar
2 1/2 teaspoons vanilla extract
1 cup all-purpose flour
1/2 cup butter, softened
4 cups confectioners' sugar
2 tablespoons milk, or as needed
1 1/2 teaspoons peppermint extract
6 drops green food coloring
1 1/3 cups semisweet chocolate chips
6 tablespoons butter
1 tablespoon vanilla extract
