Summer is such a great time of the year. One of my favorite things about it is fresh fruits and vegetables. Last week, a friend gifted me fresh rhubarb. (You might be able to find some at the Falls Park Farmers Market too!)
There are so many wonderful things you can make with fresh rhubarb. Last night, I made fresh rhubarb pie. Here’s how to make this simple – yet delicious recipe:
WHAT YOU NEED:
4 cups chopped rhubarb
1.5 cups white sugar
6 T. All-purpose flour
1 T. butter
9 inch double pastry crust (pre-made, or you can make your own) HERE is the quick and easy pie crust recipe I used
Preheat oven to 450 degrees F
Combine sugar and flour. Sprinkle 1/4 of it over pastry in pie plate. Next, layer with rhubarb. Sprinkle with remaining sugar and flour. Dot with small pieces of butter. Cover with top crust.
Place pie on lowest rack in oven. Bake for 15 minutes. Reduce oven to 350 degrees F, and continue baking for 40 to 45 minutes.
Serve warm or cold. (My favorite is with a scoop of vanilla ice cream!)
